Spinach and Potato Curry

Serves 4 as a main course or 6 as a side dish
Preparation time: 20 mins
Cooking time: 25 mins

What you need:
2 saucepans
2 medium sized onions, finely chopped
3 small green chillies, slit
3 tomatoes, coarsely chopped
8 medium sized potatoes, peeled and cut into quarters
2 bunches of spinach, washed and chopped (about 500g)
½ tsp turmeric powder
6 cloves garlic, finely chopped or sliced
Vegetable oil, salt

Spice mix: grind together the following...
4 bird's eye dried red chillies
½ tsp fennel seeds
1 ½ tsp coriander seeds
1 tsp freshly ground black pepper
(If you add a little salt to the grinder, it will help break down the coriander seeds)

What you do:

  • Heat 3 tablespoons of oil in a saucepan large enough to hold the potatoes. Add the onions and fry gently until they soften and start to brown.
  • Add the green chillies,  turmeric and the ground spices.
  • Fry briefly and add the tomatoes.
  • Cook these down a little, and add the chunks of potato. Stir these into the mix and move them around over the heat for about 5 minutes, then add water, enough to just cover the potatoes. Bring to the boil, add 1 teaspoon salt, reduce the heat, and simmer until the potatoes are just cooked.
  • In another pan, heat 2-3 tablespoons of vegetable oil. When hot, add the garlic and fry until it turns golden in colour.
  • Add the spinach and fry it until it begins to wilt. Add the contents of this pan to the potato curry and mix in. Check for salt.
  • Serve with rice or bread and some plain yoghurt.


Serve with a bottle of Hix & Buck’s delicious La Grange de Saumassac.
